My Mom used to make this great dessert for us quite often. We thought it was great, so does my family. It is very easy to make and a quick dessert.


1 cup uncooked rice (not instant)
4 cups water
1/2 teaspoon salt
1 8 ounce can crushed pineapple
10-12 marachino cherry halves
1 cup minature marshmallows
2 cups whipped cream or 2 cups non dairy whipped topping
1 Tablespoon vanilla extract


Cook rice in lightly salted water in saucepan until tender. Rinse with cold water; drain Mix with pineapple, cherry halves and marshmallows in a largebowl. Fold in whipped cream or non dairy topping and vanilla. Spoon into serving bowl. Chill in refrigerator until ready to serve. At least 4 hours.
