Funnel Cake

I received a telephone call from my grandson who was in junior high school. He asked if I had, flour ooil, sugar, eggs and vanilla. When I told him that I did. He asked if he and his sister could come up and make funnel cakes. Of course I said yes and in ten minutes they were in my kitchen. They helped a little, but guess who did most of the work and who did most of the eating?

Ingredients

1 cup Carnation Evaporated Milk
1 cup water
2 cups all purpose flour
1 teaspoon baking powder
1 Tablespoon sugar
2 eggs
1/2 teaspoon salt

Oil for frying cakes

Directions

Mix milk, water and eggs together
Sift flour, baking powder, salt and sugar into a bowl.
Combine with milk mixture.
Beat until smooth.
If too thin add a little more flour, if too thick a little more milk.
Put at least 3 inches of oil into a heavy dutch oven. Heat it until it is 350-375 degrees.
Put some batter into a funnel, holding your finger over the opening , hold over hot oil and let as much out as you want for a cake.
Fry until golden brown, turn over, fry other side until golden brown
Drain on brown paper bag Put into large bowl,sprinkle with powderded sugar, cinnamon and sugar or just sugar.
Make sure that you have a crowd around as these are delicious eaten as soon as they are fried. You won't have trouble getting people to eat them.
