Potato Casserole
We had this with our Easter dinner- a friend brought it over. It is delicious!


2 lb. thawed hash browns
1/2 c. melted butter
1 t. salt
1/2 t. pepper
1/2 c. chopped onion
1 can cream of chicken soup
1 pint sour cream
2 c. grated cheddar cheese
Topping: 2 c. crushed Ritz crackers
1/4 c. melted butter


Preheat oven to 350 degrees. Mix potatoes, 1/2 c. butter, onion, salt, pepper, sour cream, and cheese and spread into a 3 qt. casserole dish. Bake 45 minutes, covered. Meanwhile, mix topping ingredients. Place on top of potatoes and bake 10 more minutes uncovered, until golden brown.
