Peanut Butter Cupcakes

These are a nice change instead of yellow or chocolate cupcakes. They go over big at bake sales too.


1/2 cup margarine
1 1/2 cup brown sugar
1/2 cup peanut butter
1 teaspoon vanilla
2/3 cup Carnation Evaporated milk
2 eggs
1 1/2 cup flour
1/2 teaspoon salt
2 teaspoons baking powder


Cream margarine, brown sugar,peanut butter and vanilla until creamy. Add eggs. Add flour. baking powder and salt; stir in alternately with milk. Beat until smooth. Using muffin pans, fill cupcake papers 2/3 full, bake in a 350 degree oven for 20 to 25 minutes or until top springs back when touched.
