COLCANNON (Irish Potatoes)

This is a very old Recipe (1860's)I have brought it up to date by useing an Electric Mixer- Try it You'll like it !!

Ingredients

6 Med potatoes peeled & sliced in
Quarters.
4 C. Shreded Cabbage.
1 C chopped onion.
1/4 C. Butter
1/2--3/4 C milk.
Salt & Pepper to taste

Directions

1) Cook Potatoes in salted water 'til tender and drain.Meanwhile cook cabbage (about 15 minutes) and drain
2) Simmer onions in milk for 10 minutes.
3) Mash potatos with electric mixer-add Onions and as much milk as needed to make the Potatoes Fluffey.
4)Stir in the cabbage(maybe top with a little parsley)--Serve with butter or Gravey--Enjoy
