Chicken with Pear Cranberry chutney

This is low-fat but the taste is huge!


one pound chicken breast, boneless and skinless, cut in one-inch cubes
1-1/2 tsp. all-purpose flour
salt and freshly ground black pepper
1-1/2 tsp. vegetable oil
3 green onions or scallions, chopped
1 pear, peeled, cored, and chopped in one-inch cubes
1/4 cup dried cranberries
3/4 cup pear nectar


Toss the chicken cubes with salt-pepper-flour mixture; saute in 1-1/2 tsp . oil for five minutes - turning once - to brown. Remove from pan and set aside.
Add the chopped green onions and the chopped pear to skillet, saute for one minute to brown lightly. Stir in dried cranberries and pear nectar, simmer for 5 minutes. Add the chicken back to pan and stir to glaze chicken for one minute. Serve.
