Zucchini Puffs

I created this recipe when my garden zucchini was bountiful. We love it and have even served it as a vegetable side dish!


2 to 3 medium zucchini, sliced 1/2 inch thick (For a party look, score the zucchini with a fork before slicing); 1/3 c. mayonnaise; 1/3 tsp. dried basil; 1/2 c. parmesan cheese, grated


Combine cheese, herbs and mayonaise. Spread on each zucchini slice and place on broiler pan. Broil 5 inches from heat about 3-6 minutes until tops are golden. (Puffs can be made ahead, covered and refrigerated, before broiling. )
