Soft Ginger Cookies

These cookies are a favorite of everyone and very easy to make. Our Ruritan Club has a saftey break each year at which we serve, coffee, hot chocolate, tea and cookies for the travelers on the interstate in our area. These are one of the first cookies to go. We charge no money, but if people want to donate that is fine, if they do not that is fine also. It is a chance for the weary travelers to get out of the car or truck, stretch their legs and be able to get a drink or bite to eat or both. This is an oldie but goodie recipe.

Ingredients

1 cup molasses (I use Brer Rabbit)
1 cup sugar
1 Tablespoon vinegar
Fill the rest of the cup with Carnation Evaporated milk
2 eggs, well beaten
4 cups all purpose flour
1/2 teaspoon cloves
1 teaspoon cinnamon
1 1/2 teaspoon ginger
1 teaspoon salt
2 teaspoons baking soda
1 cup melted vegetable shortening

Directions

Mix ingredients in order given, sifting flour with soda and spices. Mix thoroughly. let stand about 10 minutes. Drop by a cookie scoop or teaspoonfuls onto a greased baking sheet. Bake in a 325 degree oven for 8 to 15 minutes.
