Colcannon ( Potatos and cabbage)

This Recipe is from the old people That lived on the Blasket Islands. They served Colcannon,( very tasty dish) with pork,Lamb and fish.


6 med. Potatos -peeled and quarted.
4 Cups Shredded Cabbage
1 C chopped onions
1/2 to 3/4 Cup milk
Salt and Pepper to taste
1/4 C of butter + 1 tbl.


1)Cook the potatos in salted water until tender and Drain.
2) meanwhile cook the cabbage in anouther pot until cooked (about 15 minutes) drain well.
3) Simmer Onions in milk for 10 minutes in a third pot.
4) Mash potatos and use as much milk & Onions as needed to make them fluffly
5) fry the Cabbage in 1 tbl of butter for 2-3 minutes DO NOT BROWN.
6) Stir the cabbage into the potatos and milk- serve with Butter or gravey
