Pistachio Pudding Tarts

This is something green for St Pats day but very good anytime. Use other flavors of pudding for different occasions.

Ingredients

1 cup butter softened
1 8 oz pkg cream cheese softened
2 cups flour
1 pkg (3.4 oz) instant pistachio pudding
1 3/4 cups cold milk

Directions

In mixing bowl, combine the butter, flour and cream cheese, mix well. Shape into 48 balls and press into the bottom and up sides of mini-muffin tins. Bake 400º for 12-15 minutes. Cool for 5 minutes and carefully remove to a wire rack to cool completely.
Mix the pudding and the milk on low speed for 2 minutes. Cover and chill for 5 minutes. Spoon into the tart shells and serve immediately.
