Ingredients
Meat Mixture
1 pound ground beef
1 package taco seasoning mix
Bottom Batter Mixture
1/2 cup corn bread muffin mix
3/4 cup all-purpose flour
1 envelope "Fast Rising" yeast
1/2 teaspoon salt
3/4 cup carnation evaporated milk (warmed,120°F)
3 tablespoons corn oil
1 egg, slightly beaten
Toppings
1-1/2 cups chunky salsa
1 cup shredded Mexican-style cheese or sharp cheddar
1 cup crushed corn tortilla chips
sour cream* optional
Directions
Brown ground beef in a large skillet and drain. Add taco seasoning and mix well.
In a medium bowl mix corn bread muffin and flour. Make a small well in the center and add yeast then warmed milk and blend gently. Add
slightly beaten egg, salt and corn oil. Stir until blended but do not over mix.
Pour batter into greased 8 x 8 baking dish. Let rest in pan, alone, 5 minutes to allow yeast to work. Top batter with taco meat mixture. Spoon salsa over meat, sprinkle shredded cheese over salsa and top salsa with crushed chips.
Place into a COLD oven and set temperature to 350? F. Bake for 30 minutes or until bottom baked to solid lightly golden crust. (Do not over bake.)
Serve warm with a spoonful of sour cream if you so desire.
