4 cups of thinly sliced apples (peel them first)
1 cup of sugar, divided
1 cup of all purpose flour, divided
3 tablespoons of butter, divided
1 cup of quick-cooking or old-fashioned rolled oats
1/2 teaspoon of ground cinnamon
1 cup of peanut butter (I like creamy better)
Heat oven to 350 degrees and grease a 9 inch square baking pan.
Stir together the apples, 3/4 cup of sugar and 1/4 cup of flour in a large bowl. Spread the batter into the greased pan; put 2 tablespoons butter the butter in dots on top. Combine the oats, the remaining 3/4 cup of flour, the remaining 1/4 cup of sugar and all of the cinnamon in a medium bowl and set aside.
Put the remaining 1 tablespoon of butter and the peanut butter in a small microwaveable bowl and zap on high for 30 seconds or until the butter is melted then stir until it's smooth. Add to the oat mixture and blend until it looks like crumbs. Sprinkle this crumb mixture over apples.
Bake for 40 to 45 minutes or until the apples are tender and edges are bubbly. Cool slightly.
Serve warm or cool with ice cream on top.
