Easy Potato Soup for a cold day

A wonderful easy soup to make for a winter eve

Ingredients

Potato Soup

2 cups raw potatoes, cubed
2 medium onions, diced
2 celery stalks, chopped
2 ½ cups boiling water
2Tbsp. butter
3 Tbsp. flour
1 ¾ tsp. salt
1/8 tsp. pepper
2 cups milk

Directions

Place potatoes, onions, celery and water in a large saucepan, cover and cook until veg. are tender, about 15-20 minutes.

Melt butter in a skillet, add flour and seasonings and blend over low heat. Add milk and increase heat to medium., stirring until mixture has thickened and is smooth. Add skillet mixture to the vegetable soup in the large saucepan and mix well.
