Yogurt Orange Supreme Cake

Deliciously moist...


butter and flour for pan
2 Tbsp. grated orange rind
2 tsp. orange extract
2 1/4 cups flour
3/4 cup cake flour
1/4 tsp. baking soda
1 Tsp. salt
2 sticks butter, softened
2 3/4 cups plus 2 Tbsp. sugar
6 eggs (or a combination of egg substitute,egg whites and eggs)
1 cup fat free yogurt


Set oven to 325 degrees. butter a 10 inch tube pan. Line bottom with circle of wax paper cut to fit. Butter the paper and dust the pan with flour, tapping out excess.

In a small bowl lightly stir together the rind and extract. Sift the flour, baking soda and salt onto a sheet of wax paper. Cream butter in large bowl on moderated speed for 4 minutes. Add the sugar in 4 additions, beating for 1 minute after each portion is added. Add the eggs, one at a time, beating for 30 seconds afteer each addition. Blend in orange rind mixture. On low speed, alternately add the sifted ingredients in three additions with the yogurt, in 2 additions, beginning and ending with the sifted ingredients. Scrape down the sides of bowl. Turn batter into pan and smooth top. Bake cake for 75-80 minutes. Cool cake in pan on rack for ten minutes. Invert onto another cooking radck, peel away paper, invert to cool right side up.

Soaking Syrup:

1/3 cup lust 2 Tbsp orange juice
1 Tbsp lemon juice
1/3 cup plus 2 Tbsp. sugar

Mix orange juice, lemon juice and sugar together. Brush the juice and sugar mixture over the top and sides of warm cake.
