whip up this easy recipe with ingredients you have on hand. serves-4 total yime- 1hour 25 minutes,

Ingredients

1 chopped onion
1 pkg or 16 0z frozen mixed vegetables
2 eggs
3/4 cup milk
1 frozen 9"pie crust
1 cup swiss cheese,shredded

Directions

PREHEAT OVEN TO 375F. IN A SKILLET HEAT 1 TBSPOON OIL OVER MEDIUM HEAT.ADD ONION;COOK 3MTS.ADD VEGETABLES, 1/2 TEASPOON SALT AND PEPPER EACH.COOK AND STIR UNTIL LIQUID EVAPORATESFOR 4-5 MTS.BEAT EGGS WITH MILK.STIR CHEESEAND RESERVE.PLACE CRUST ON JELLY ROLL PAN;FILL WITH VEGETABLES,THEN EGG MIXTURE.BAKE 40 MTS OR UNTIL SET.SERVE HOT.
