Pumpkin Ice Cream Dessert

Easy, light, delicious combination of pumpkin and ice cream

Ingredients

1 package graham crackers
1/4 c. margerine
1 T. sugar
1 can Libby's 100% pumpkin
1 c. brown sugar
3/4 t. salt
1 t. cinnamon
1/2 t. ginger
1/4 t. ground cloves
1/4 t. nutmeg
1/2 gallon ice cream

Directions

Mix crackers, melted margerine and white sugar. Press in the bottom of a 9x13 pan.
Beat together the pumpkin, brown sugar, salt and spices.Stir in softened ice cream. Pour over crust and smooth. Freeze until ready to serve.

Serving suggestion: top with whipped topping and toasted coconut.
