Pumpkin Roll

Pumpkin bread with cream cheese filling.


3 eggs 1 cup crushed nuts
2/3 cups of canned pumpkin ¾ cups of sugar
¾ cups self rising flour 1 tsp. of lemon juice
2 tsp. cinnamon ½ tsp. nutmeg
1 tsp. ginger
1 cup powdered sugar 1 package of cream cheese (softened)
4 tbsp. butter


For the bread:Beat eggs, sugar, pumpkin, and lemon juice together. Add flour and all spices. Blend until smooth. Batter will be light. Spray cookie sheet with cooking spray, pour batter onto cookie sheet. Sprinkle with nuts. Bake at 370 degrees for 15 minutes. Turn onto towel, roll up towel and bread together and refrigerate until cooled completely.
For the filling:Combine all ingredients and beat until smooth. Unroll bread, add filling. Roll bread and filling together (without the towel) wrap in aluminum foil and refrigerate.
