A nice treat to have with tea or coffee.


2 cups flour
1 teaspoon salt
1 tablespoon baking powder
1 teaspoon cinnamon
1 egg
3 tablespoon sugar
1 cup milk
1/4 teaspoon vanilla
1 quart oil for frying
powdered sugar for dusting


1. Half fill a large, deep saucepan with oil and preheat to 375 degrees.
2. Sift together flour, salt, baking powder & cinnamon in large mixing bowl. In a separate bowl, beat the egg well, then beat into it the sugar, milk & vanilla. Pour the egg mixture into the flour mixture, mix slightly until moistened. Turn onto a floured surface and knead lightly. Roll dough out to a 1/4 inch thickness and slice into diamond shapes, about 3 inches long.
3. Fry the pieces in oil turning once, until they are golden brown and puffed up. Remove from oil and drain them on paper towels, then dust with powdered sugar. Best if served immediately.
