AN APPETIZER & DESSERT THAT ARE FESTIVE & DELICIOUS OF THE LATINS. PREPARATION TIME-10-16MTS MAKES 6 SERVINGS

Ingredients

1 CUP VEGETABLE OIL
2 POUNDS GREEN PLANTAINS ABOUT 3
1/4 TEASPOON SALT
GUAVA DIPPING SAUCE

Directions

PEEL PLANTAINS.CUT A SLIT ALONG THE LENGTH OF THE PLANTAINStHEN CUT 3/4 INCH THICK SLICES ON THE DIAGONAL.
PLACE OIL IN SKILLET & HEAT ON HIGH HEAT.
COOK SLICES IN BATCHES ,ABOUT 2 MTS PER SIODE ,UNTIL SLIGHTLY GOLDEN.SET ASIDE TO DRAIN.
SET EACH FRIED PLANTAIN ON FLATSIDE & SQUASH IT FLAT TO GET OVAL SHAPE.
RETURN FLATTENED SLICES TO OIL IN BATCHES & COOK TILL GOLDEN BROWN FOR ABOUT 2MTS.SEASON WITH SALT .SERVE WITH GUAVA DIPPING SAUCE.
