Pumpkin Cookies

Pumpkin Cookies

Makes large filling cookies(Gose great with a tall glass of Milk or a hot cup of Tea)


2 Cups Flour
1 Cup quick oats
1 cup butter/margarine (soft)
1 Cup Brown Sugar(firmly packed)
1 egg slightly beaten
1 Cup Pumpkin(Cooked & Mashed/Or canned)
1 Cup mini Chcolate chips
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 tsp pumpkin spice (optional)
1 tsb Vanilla extract


-pre heat oven to 350
-combine flour,oats,baking soda,cinnamon,pump-spice and salt.
-Cream butter and gradually add sugar beat untill fluffy and add egg and vanilla.(MIX WELL)
-Alternate additions of dry ingredients and Pumpkin to butter/sugar mix.
-mix well after each addition
-Add chocolate chips
-Drop by spoonfulls onto lightly greased cookie sheet.
-Bake for 20-25 min until lightly brown
-remove from sheet and cool on racks
