Pumpkin Pie Ice Cream Treat

Just like the infamous ice cream chain, you can make your own Pumpkin Pie ice cream blizzard.


2 scoops of slightly softened vanilla bean ice cream (can use frozen vanilla yogurt as well for less calories and fat)
1-2 tablespoons of Libby's Canned Pumpkin
1/4 cup chopped vanilla wafers (1/4 cup cooked pie crust pieces can be substituted)
dash of fresh ground nutmeg
whipped cream for garnish


In a blender smooth out the ice cream and canned pumpkin. Remove from unit and hand blend in the cookie or pie pieces. Mixture will be creamy but still thick. Place into a decorative glass or bowl. Garnish with a dollop of whipped cream. Finish with a dash of nutmeg.
