Marshmallow butter icing

This one is like a seven minute frosting only much better.


2 egg whites
4 oz. icing sugar, sifted
5 oz. butter, softened (preferably unsalted butter marg or salted butter work well too)


Put egg whites in top of a double boiler and place over simmering water (if the water is boiling you will cook the eggs instead of whipping them). Add the icing sugar add whisk or beat with mixer until a trail is left when beater is lifted up. Remove from heat and continue to beat until cooled and medium peaks form. Place butter in a bowl and beat until light and fluffy. Add egg mixture a little at a time, beating well after each.

Depending on the size of cake it may need to be doubled
Chocolate - add 2 oz. of melted chocolate
Coffee - add 1 tbsp of strong coffee
Mocha - combine above two

any other flavor, just add 1 tsp of flavoring
