Ingredients

3 MEDIUM LARGE BEETS,ABOUT 1 POUND
1 SMALL CLOVE GARLIC,PEELED
1/2 CUP PLAIN LOWFAT YOGURT

Directions

PREHEAT OVEN TO 400F.USING A VEGETABLE PEELER OR SHARP KNIFE,PEEL BEETS.SALT LIGHTLY.WRAP BEETS IN LOOSE POUCH OF FOIL &TIGHTLY SEAL AT THE TOP.PLACE IN A PIE TIN .ROAST FOR 1 1/2 HOURS.REMOVE FROM OVEN.LET COOL 15 MINUTES.CUT BEETS INTO LARGE CHUNKS.BLEND IN A BLENDER TILL COARSE.CRUSH GARLIC &BLEND WITH BEET PUREE.ADD YOGURT &PROCESS FOR 5 SECONDS.SEASON WITH SALT &POWDERED PEPPER.CHILL.MAKE 2 CUPS
