These are delicious appetizers for a thanksgiving dinner. Greek twist to an American favorite.


1 can 28 oz Libby's pumpkin filling
1 1/2 teaspoon cinnimon
16 oz ricotta cheese
4 tablespoons feta cheese
2 eggs
3 tablespoons brown sugar
1 box (16oz) f1llo dough
1 1/2 stick unsalted butter
1/2 olive oil


Mix together pumpkin filling, cinnimon, ricotta, feta cheese, eggs and brown sugar in a large bowl.
Cut fillo dough into four vertical strips. Melt butter with oil,and brush flat pan. Also brush each fillo dough strip before applying one tablespoon mixture on the bottom. Flip right corner of fillo dough with filling to the left side and repeat till the end (you should have a triangle shape. Fill up pan. Brush tops of all triangles with butter. Preheat oven to 350'. Pumpkin trianges should be cooked for about 20 -25 min - or until light brown and crispy.
