A LOW FAT & LOW CALORIE RECIPE SERVES4,MAKES 3CUPS SOUP+steamed milk for topping

Ingredients

1 POUND BEETS9no leaves,stalks0
1 CUP 1./. MILK
3/4 CUP 1./. MILK FOR STEAMING
4 MEDIUM JUICE ORANGES

Directions

PREHEAT OVEN TO 400F.PEEL THE BEETS.WRAP THEM IN A LOOSE POUCH OF FOIL & TIGHTLY SEAL AT THE TOP.PLACE IN A BAKING SHHET & ROAST FOR 1-1 1/2 HRS.WASH ORANGES.FINELY GRATE RIND TO YIELD 1 TBSP ZEST.CUT ORANGES IN HALF &SQUEEZE TO YIELD 1 CUP JUICE.SET ASIDE.REMOVE THE BEETS &COOL.CUT BEET INTO LARGE PIECES &PLACE IN A FOOD PROCESSOR.PROCESS,SLOWLY ADDING ORANGE JUICE.ADD 1 CUP MILK &BLEND TILL SMOOTH.
TRANSFER TO LARGE PAN .ADD SALT& FINELY POWDERED PEPPER TO TO TASTE,ADD 1/2 TBSP GRATED ZEST & HEAT IN SIM FLAME
PLACE THE HOT SOUP IN TALL COFFEE CUPS.STEAM 3/4 CUP MILK BY SCALDING MILK IN A SMALL SAUCEPAN ,WHISKING VIGOROUSLY WITH A WIRE WHISK.SPOO ONTO TOP.SPRINKLE WITH OTHER ORANGE ZEST.
