1 1/3 c. water 2 Tbsp butter
1/3 c. milk 1 1/2 tsp salt, divided
1 1/3 c. mashed potato flakes
1 egg, beaten 1/2 c.quick cooking oats
1/2 c/ chopped gr. pepper
1/3 c. chopped red onion 3/4 tsp pepper
1 lb. lean ground beef 1 can (11.5 oz) V-8
1/4 c ketsup
In suacepan bring water, milk, butter and 1/2 tsp salt to boil. Remove from heat and stir in mashed potato flakes. In bowl combine egg, oats, gr. pepper, onion, pepper and remaining salt. Crumble beef over mixture and mix well. On waxed paper pat beef mixture into 12 x 8 in rectangle. Spoon potatoes lentghwise down center third to within 1 inch of edges. Bring long sides over potatoes to meet in center; seal seam and edges. Place carefully in greased 13 x 9 baking dish. Bake uncovered at 350 degrees for 30 minutes, drain. Pour V-8 over loaf, top with ketsup. Bake 18-22 minutes longer or until meat is cooked and meat thermometer reads 160 degrees. Let stand 5 min before serving.
