Pancake Mix Cookies

No eggs, no problem. I was desperate for some cookies and discovered that instant pancake mix has all the ingredients that I needed. These cookies were not only easy, they were good. I have always been able to substitute ingredients when I am out of something. All you cookie lovers just have to try these cookies.


1 C. Flour
3/4 C. Complete Pancake Mix
1/4 tsp. Salt
1/2 tsp. Baking Soda
1 1/2 sticks butter or margarine softened
1/2 C. Sugar
1/2 C. Firm packed Brown Sugar
1 tsp. Vanilla
1 pkg. (12oz.) Semi sweet chocolate chips
3/4 C. Chopped nuts (if desired)
2 TBSP. Water (or more if needed)


Preheat oven to 375
Put all dry ingredients in a bowl; mix and set aside.
Mix butter, sugars and vanilla together with mixer until smooth. Stir in dry ingredients. Add chips and nuts. Stir.
Drop by tsp. or cookie scoop onto ungreased cookie sheet. Bake 10 min.
