Rhubarb Meringue

I dont know why the meringue in the name as it does not have meringue in it. This is a good dessert no matter what the name.


1 cup flour
5 Tbls powdered sugar
1/2 cup butter
3 eggs
2 cups sugar
1/2 cup flour
1 tsp baking powder
3 cups rhubarb cut up


Beat flour, powdered sugar and butter together and press into a 9x13 pan. Bake at 350º for 15 minutes. Beat eggs, sugar, flour and baking powder together. Stir in the rhubarb. Spread in the crust and return to the oven, baking 45 minutes more. Top with whipped cream or ice cream.
