in this recipe buttermilk replaces a sourdough starter.


one 0.25oz pkt active dry yeast
11/2TBsp honey
3 cups all- purpose flour or bread flour
pinch of salt,about 1 tsp
3/4 cup buttermilk


Stir yeast into 1/2 cup warm water(110F)& let stand for 5mts or until bubbles begin to form on the surface.Combine honey & buttermilk in a small heatproof bowl.Microwave till warm to touch for about 30seconds.Whisk yeast into buttermilk mixture with foirk.Combine flour,salt in a large bowl.Stir buttermilk mixtureuntil a thick dough forms.Transferdough to well floured work surface& knead till it is elastic & nolonger sticks to your hands.Form into a ball&set in lightly greased bowl.cover with clean dish towel&let rise 1hr in a warm place.punch dough&gather into a tight ball mass & let stand in a baking traysprayed with oil,.cover with a towel& let rise again for 40mts in a wqarm place.
Preheat oven to 375F. Cut diagonal slashes across top of loaf with sharp knife.Bake 35-40mts or until gol;den brown.Cool,slice & serve
