prep time-10-15mts cookingtime-40-50 mt yield-8 servings If youare doubling the recipe bake in 2 pans


2 cups cornmeal
1/3 cup sugar
1 1/2 tsp salt
1/2 tsp baking soda
1 cup buttermilk
1 cup milk
2 beaten eggs
3Tbsp butter,melted
1 cup corn kernels,frozen
black pepper to taste,coarsely powdered
cooking spray or oil to grease the pan


Preheat oven to 350 degrees.In a bowl mix cornmeal, sugar,salt& baking soda.Add buttermilk,milk,eggs&butter.Whisk well together.Now add corn& powdered pepper.Mix well together.Coat an 8x8inch glassbaking dish with cookingspray.Add batter;bake on middle rack for 35-40 mts.Let cool about 15 mts.
