Fresh APPLE Bread

I got this out of a newspaper some years ago, the recipe called for granny smith apples, but I prefer either Braiburn or Jonagold. This freezes really well.

Ingredients

4 C peeled and diced apples
1 1/2 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
1 1/2 C chopped walnuts
2 C sugar
2 C flour
2 eggs
3/4 C vegetable oil
1 tsp salt
2 tsp vanilla

Directions

Preheat oven to 350 degrees. Grease and flour two standard loaf pans. Whisk together sugar, oil, eggs, spices, salt, baking powder & baking soda in a large mixing bowl. Stir in flour just until it is evenly mixed. Add apples and walnuts. Stir together until well blended. Pour into prepared loaf pans and bake for 55 to 65 minutes, until center is set.
