Rhubarb-Apple Cruch

This is a good recipe to make any time that fresh rhubarb is in season.


2 c. slice fresh rhubarb
1 c. sliced apples (about 1/4 lb.)
1 c. sugar 2 Tbsp. flour
1/2 tsp. cinnamon
1-1/2 c. quick-cooking oats 1 c. flour
1 c. firmly packed light brown sugar
1/2 c. butter or margarine,cut into 1-inch pieces


Preheat oven to 375 degrees F. In a 10x10 inch baking dish put parchment paper.Combine rhubarb,apples.sugar, 3 Tbsp. flour and cinnamon in large bowl and mix throughly. Spoon evenly into dish.
Combine oats,brown sugar, 1 c. flour and butter in another large bowl (or processor) and mix until crumbly. Sprinkle over rhubarb-apple mixture.
Bake until top is lightly browned, about 40 mins.
Serve warm with your flavor ice cream.
Yield: 4 to 6 servings
