These are really tasty, and easy to make. If you like Mexican food, you will love these. These serve 4 but, I usually freeze 2 of them for later use. Prep 15 min Bake 20 min


1/2 lb gr. beef
1/2 tsp chili powder or paprika
1/4 tsp salt
1/4 tsp pepper
1 1/2 cup bisquit/baking mix
6 Tblsp water
1/2 cup finely diced green bell pepper
1 small (2 oz) can sliced black olives,(drained)
1 small tomato, (diced)
5 Tblsp sour cream
4 Tblsp Mayonaise
5 Tblsp shredded Cheddar Cheese
1/2 small onion, finely diced


(Grease or spray 4 rampkins or custard cups )
In skillet combine the gr. beef, bell pepper, tomato,chili powder or paprika, salt, & pepper, cook until meat is no longer pink, remove from heat stir in the olives, and set aside.
Combine the bisquit mix and water to form a soft dough.divide into 4th's then press onto the bottom, and up sides of greased rampkins.
Fill with the meat mixture Combine the sour cream, mayonaise, diced onion, and cheese and spread over the top. Bake uncovered at 375° for 20-25 minutes.
