an italian curti tradition for easter. this can be eaten or made for any occasion.


1/2 lb. genoa salami diced, 1/2 lb. pepperoni diced, 1/2 lb. boiled ham diced, 2 lb. ricotta cheese, 2 large mozzarella cheese grated, 1 cup italian grated cheese, 1 doz. eggs.2 boxes pie crust top and bottoms.


dice all meat, place in large bowl grated cheese along with meat. mix all together very well, add the rigotta cheese; mix well. then mix in the eggs (slightly beaten in a different bowl). place in pie shell and cover with remaining pie shell. crimp endof pie shell add a x in the middle of pie and bake in oven at 350 degrees for 1 hour. makes two pies. enjoy!!
