1-1/2 cups all-purpose flour,
1/4 teaspoon salt,
1/2 teaspoon baking soda,
1 cup white sugar,
1/2 teaspoon ground cinnamon.
2 eggs,beaten; 1/2 cup vegetable oil,
1-1/4 cup very ripe mashed banana, 1/2 cup drained, crushed pineapple,
1 teaspoon vanilla.
1/2 cup chopped walnuts,
and 1/2 cup maraschino cherries,diced
Preheat oven to 350 degrees F. Grease a 9x5 inch
In a large mixing bowl, combine the flour, salt, baking soda, sugar and cinnamon. Add the eggs, oil, banana, pineapple, vanilla, and coconut. Stir just until blended. Quickly stir in walnuts and cherries.
Bake at 350 degrees for 60 minutes or until it passes the toothpick test. Cool in pan for 15 minutes, then remove to a wire rack to cool
completely. *use only 3 eggs in a double recipie*
