Ingredients
"crust"
3/4 cup margerine 1 1/2 cups flour
1/2 cup sugar 1 tsp baking soda
1/2 cup brown sugar 3 cups of Quick
1 egg cooking oatmeal
1 tsp vanilla extract
apple filling
4-5 large red apples peeled cored and sliced
1/3 cup sugar
4 tablespoons of water
2 tablespoons of cinnamon
1/4 cup flour
2 tablespoons of margerine
1 egg
1 tsp vanilla extract
Directions
preheat oven to 350 degrees F
lightly grease cookie sheet
beat margerine and sugars until creamy. Add egg and vanilla, beat well. combine flour, baking soda, and 1 tsp salt (optional) Add to shortning mixture and mix well. stir in oats and raisins mix well.Shape into balls, place two inches apart on prepared cookie sheet; flatten slightly with fork. Bake 10 to 15 minutes or until golden brown. allow to cool to touch. crumble cookies set aside.
filling preparation
peel and core and slice red apples, place in 2 quart sauce pan with 3 tablespoons of water and sugar and cinnamon. cook over medium heat for 7 minutes. Thicken with melted butter and flour mixture. set aside.
press 1/2 of cooled cookie crumbs into pie pan.
pour in apple filing mixture. sprinkle/ spread rest of cookie crumbs over the top of filling. press down gently to "seal" crust. pie is done enjoy !
