Pineapple upside down cake

I always bake this cake in 12 inch cast iron skillet. The flavor is so good the cake melts in your mouth.


1 white or yellow cake mix
1 jar of pitted cherries
1 large can of Dole Pineapple slices
3/4 cup brown sugar
1 stick butter
1/2 cup chopped walnuts


Heat oven to 350. Place skllet on top of stove on medium heat. Place one stick of butter in skillet add brown sugar and melt bringing the mixture up the sides of the pan as it melts making sure not to burn coat the inside of the pan good. Once melted turn stove off. Put pineapple rings in a circle with one in the center of the pan. Place a cherry in the center of each pineapple sprinkle walnuts in open spaces around the pineapple.
In a large mixing bowl make cake according to package directions. Instead of using all water use the juice of the pineapple with a small amount of water for the liquid. Pour mix in to prepared skillet, place in oven bake 45 to 55 minutes. When cake is done place a plate large enough to cover the skillet on top of it, very carefully flip skillet over on to plate. Serve warm or cool .
