16 thin slices white bread or nay kind
2 Tbsp. butter or margarine, soften
2 c. diced luncheon meat 1 Tbsp. minced onion
1 c. diced boiled potaoes 1/2 c. mayonnaise
2 Tbsp. minced sweet pickles
1 c. diced hard-cooked eggs
2 c. shredded cole slaw
trim bread crusts. Butter each slice lightly.
Press down into muffin tins. Preheat oven to moderate (350 degrees F.). Bake shells until golden brown.
Combine ingredients( with exception of slaw). Blend lightly with mayonnaise. Cover, refriergate until ready to serve. Arrange two patty-cakes on each plate. Divide meat mixture into 4 portions, also cole slaw into 4 portions.On each serving plate, fill one patty-cake with the meat mixture, and the other one with the cole slaw. Serves 4
