Maude's Potato Casserole

This is my daughter's favorite, made by her grandmother for every special occasion, as she was growing up. As my daughter established her own household, Maude would make an extra casserole, and freeze it, for my daughter to take home and bake.


1 package Frozen, Cubed, Hash Brown potatoes
1 stick melted margarine (or butter)
1/2 cup finely minced onions
1 can of condensed cream of chicken soup
1 cup of grated sharp cheddar cheese
1 cup crushed corn flakes
1/2 cup melted margarine or butter


Combine the first five ingredients in a large rectangular casserole baking dish (or divide in half and bake in two smaller baking dishes). In a seperate container combine the topping ingredients and sprinkle over the top of the casserole. Cover with aluminum foil and bake in a 350 degree oven for 30 minutes, covered. Uncover and bake for 30 minutes more for a total of 60 minutes TOTAL baking time. Serve hot.
