1 1/2 c. brown sugar
1 1/2 c. granulated sugar
1 c. vegetable oil
2/3 c. water
5 t. cinnamon
2 t. cloves
2 t. baking soda
1 t. nutmeg
1 t. salt
3 c. all-purpose flour
2 c. Libby's 100% pure pumpkin (one can)
1 1/2 c. nuts, optional(i use walnuts)
Preheat oven to 350. Prepare pans*.
Combine sugars, eggs, oil and water in a large mixing bowl and mix well. Add spices, salt and soda. Add flour, gradually, mixing until well blended. Add pumpkin and nuts and mix well. Bake by schedule below* until done. Cool and store. May be frozen.
* This will make 2 regular size bread pans(9X5X3), bake about 1 hr 15 mins, or until top springs back when touched.
3 medium size pans (7X4 1/2X3), bake about 1 hr.
or 8 mini bread pans(5 1/2X3X2 1/2) bake for 50-55 mins.
This can also be baked in 4 1 lb.coffee cans: half full bake for about 1 and 1/2 hrs. If you use these, you can decorate the can and lid for gift after baking.
