Position rack in lower one third of oven; preheat to 350 degrees. Sift the cake flour with
1/2 cup of sugar. Beat egg whites and juices
together. Gradually beat in the remaining sugar.
Continue beating until the mixture stiffens. Add
in the lime zest. Sift 1/3 cup of flour over the
whites mixture. Beat on low and continue until all the flour is gone. Spoon batter into a 10"
tube pan and for 40-45 minutes. Cool inverted on
the neck of a bottle of a good dessert wine.
Fresh Berry Compote:
2 cup fresh strawberries
1 cup fresh raspberries
3 tablespoon superfine sugar
a squirt of fresh lemon juice.
