Key Lime Angel Food Cake

I love angel food cake, and I love key lime pie so why not combine the two? This cake has the right balance of sweetness and tartness and is light in texture. An easy fresh berry compote recipe follows. This makes for a light dessert perfect for a summer night in Florida.


1 cup cake flour
12 large egg whites
1/2 teaspoon salt
2 teaspoon key lime juice
2 teaspoon fresh lime juice
2-1/2 teaspoon lime zest
1-2/3 cup superfine sugar
1 teaspoon cream of tartar


Position rack in lower one third of oven; preheat to 350 degrees. Sift the cake flour with
1/2 cup of sugar. Beat egg whites and juices
together. Gradually beat in the remaining sugar.
Continue beating until the mixture stiffens. Add
in the lime zest. Sift 1/3 cup of flour over the
whites mixture. Beat on low and continue until all the flour is gone. Spoon batter into a 10"
tube pan and for 40-45 minutes. Cool inverted on
the neck of a bottle of a good dessert wine.
Fresh Berry Compote:
2 cup fresh strawberries
1 cup fresh raspberries
3 tablespoon superfine sugar
a squirt of fresh lemon juice.
