Lemon Sugar Cookies

Lemon Sugar Cookies

I made up this recipe by accident, when I ran out of vanilla extract I substituted it with lemon extract and they were delicious.


3/4 c. sugar
1/3 c. shortening
1/3 c. vegetable oil
1T. milk
1-2 tsp. lemon extract
1 egg
1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt


Preheat the oven to 350 degrees. In a large bowl combine the sugar, shortening, oil, milk, lemon extract and egg. Beat until light and fluffy. Next add the flour, baking powder, and salt- mix well. Drop by teaspoons onto a ungreased baking sheet. Flatten with a spoon, top with sugar or colored sugar crystals for decoration. Bake 10-12 minutes or until golden brown.
