we are a family of 5 with 3 girls,they couldn't wait to bring these for school snack the next day. They are very moist.


2cups brown sugar
1 cup vegtable oil
1-15oz.can canned pumpkin
2 eggs
3 cups flour
1 tsp. salt
1 tsp. baking powder
1 tsp.baking soda
1 tsp.vanilla extract
1 1/2 Tbs. ground cinnamon
1/2 Tbs. ground ginger

FOR FILLING 3/4 cup shortening
3/4 cup confec.sugar
1 cup marshmellow fluff
3 drops vanilla extract

Beat well till fluffy


Preheat oven to350 degrees-- lightly grease baking sheet. Combine oil &brown sugar. Mix in the pumpkin & eggs,beating well. Add flour, salt, baking powder, baking soda, 1tsp.vanilla.cinnamon and ginger. Mix well. Drop dough by spoonfulls on baking sheet. Bake for 10-12 minutes. Let cookies cool, then make sandwiches with 2 of the cookies , with the filling above in the middle. Enjoy , my family does.
