Directions
1. grease five 4 1/2x2 1/2x1 1/2" loaf pans or 2 8x4; set aside. combine 1c flour, sugar, ginger, bking powder, bking soda, nutmeg and salt. add pumpkin, milk, eggs and shortening. beat on low to med speed about 30 seconds. beat on high 2 minutes. add remaining flour; beat till well mixed. stir in dates.
2. spoon batter into prepared pans. bake at 350 oven 35-40 minites for mini loaves, or 45 minutes for larger or till toothpick inserted near center comes out clean. cool on wire racks for 10 minutes. remove from pans. cool completely. wrap and store overnight. drizzle with glaze before serving.
Spiced Glaze: in small bowl, stir together 1/2c sifted powdered sugan and 1/8tsp ginger. stir in enough water (2-3tsp) to make drizzling consistency.
