Sort and rinse beans. Cover with water in a 2 quart saucepan and bring to a boil. Turn off heat, ocover and let beans sit in their cooking water for 1 hour. Return to heat and simmer the beans, covered, for 1 hour. Drain. beans should be tender but firm. Do not stir beans.
In a medium saucepan, combine and beat onion, tomato juice, maple syrup, tomato paste, water and pepper, layer beans and sauce in a non-stick sprayed 2 1/2 quart casserole. Cover and bake for 2 1/2 hours or until it looks done. Oven 325.
