Rudy's Cream Corn Muffins

These are delightfully good, easy to make and everybody just loves them!


1 cup flour
1 cup yellow cornmeal
2 Tbsp. sugar
2-1/2 tsp. baking soda
1 tsp. salt
3/4 cup milk
1/2 cup vegetable oil
2 eggs, lightly beaten
1/2 tsp. Tabasco sauce
1 cup cream-style corn


Preheat oven to 400 degrees. Grease 12 muffin cups. In large bowl, combine flour, cornmeal, sugar, baking soda and salt. In medium bowl, combine milk, oil, eggs and Tabasco sauce. Make a well in the center of dry ingredients. Add milk, mixture and stir to combine. Stir in corn and spoon into muffin cups. Bake for 15-20 minutes or until toothpick in center comes out clean. Cool for 5 minutes and serve warm. Makes 12 muffins
