3 small onions, sliced
3 ribs celery, finely diced
1 sweet red pepper, finely diced
2 tablespoons margarine
6 cups no-slt added canned tomatoes
4 cups water
2 bay leaves
1/2 tablespoon dried basil,crushed
1/2 teaspoon whole black pepper
3/4 teaspoon curry powder
2 6 1/2 ounce cans minced clams, undrained
1/3 cup plain low-fat yogurt for garnish
In a large sauce pan, saute onion, celery and pepper in the margarine until soft.
Add tomatoes, water, bay leaves, basil, pepper, curry and clams, Simmer 1 hour. Remove bay leaves. Serve garnished with a dollop of yogurt.
