Wash and core apples. Make several slits on upper portion of apples. Place in shallow baking dish. In a small saucepan, mix orange rind, orange juice, raisins, cinnamon and allspice. Bring to a boil; reduce heat and simmer for 5 minutes. Pour sauce over apples and cover with aluminum foil. Bake until apples are tender, basting apples 3 times during baking. Servie warm or chilled.
Oven 350 for 45 minutes.
