Combine flour, cinnamon, and sugar. Cut in butter unitl mixture is coarse and crumbly. Add buttermilk and raisins to make soft dough. Turn out on a floured board and cut with biscuit cutter. Be careful not to handle dough to much or it will make scones dense. Place scones close together on a cookie sheet sprayed w/ vegetable oil. Brush tops with egg whites. Bake at 400 degress F unitl lightly browned (about 10 min) May be reheated in foil. Don't overcook scones because when reheating they cook further.
