Beacon Hill Apple Cake

This is a very simple,yet traditional Boston Beacon Hill apple cake made each fall

Ingredients

1 ¼ cups four
1 tsp. Baking powder
1 Tbsp. Sugar
½ cup butter
1 egg, beaten
½ tsp. Vanilla
3 medium apples
golden raisins , chopped nuts if desired

Layer over apples
¾ cup sugar
1 ¼ Tbsp. Flour
pinch salt
2 Tbsp. Butter
½ tsp. Cinnamon

Directions

Sift flour, measure and sift with baking powder and sugar. Cut in butter until crumbly. Add vanilla to egg and blend with flour mixture. Add raisins and nuts if desired. Press into an 8” square pan. Put apples in over lapping layers-Combine last five ingredients and spread over apples.
Bake at 350 degrees for 45 minutes.
